CHEF OWNER

A rising young talent in the Singapore culinary scene, Chef/Owner Javier Low honed his skills from the age of 17, spending several years in the renowned kitchen of Iggy's. Deemedone of the first fine dining restaurants at the forefron of modern gastronomy in Singapore, it was at Iggy’s where Javier was exposed to a culinary exchange of ideas that continues to shape his global perspective of cuisine to this day. Javier ventured to Kyoto at the age of 25 where he delved deeper into the art of Kyoto-European cuisine working at Michelin starred Cenci.

He returned to Singapore in 2018 to emerge as a trailblazer for today's young local chefs challenging the perceptions of contemporary cookery with the opening of Il Den, a 12-seater one man kitchen. Here, he established a devoted following of discerning foodies that resonates today. Three years on, Iru Den marks Javier’s evolution as a Chef/Owner as he continues to push the boundaries of progressive cooking, drawing inspiration from Modern European and Japanese cuisines with an uncompromising respect for produce and seasonality.
